Fatayer bil-Sabanegh / Spinach Triangles

Makes 25-30

The dough for these triangles is used with a number of fillings to make both the triangles below, and the fried crescents known as sambusak in the following recipe. You can vary on the spinach filling here by using purslane (leaves only), sorrel, Swiss chard, dandelion or wild thyme. Whichever you chose, the quantities and instructions will be the same as below.

Ingredients

150g plain white flour
¼ tsp salt
1 tbsp extra virgin olive oil, plus extra to brush dough
200 g spinach, shredded into thin strips
1 small onion, very finely chopped
¼ tsp Adonis ground black pepper
1 tbsp Adonis sumac
1 tbsp pine nuts
Juice of ½ lemon, or to taste
1 tbsp extra virgin olive oil

Cooking instructions

Mix the flour and salt in a mixing bowl and make a well in the centre. Add the oil to the well and, with the tip of your fingers, mix the oil with the flour until well incorporated. Gradually add 90-100 ml water (it is difficult to measure the exact amount of water as it depends on the brand of flour you are using), knead until you have rough dough.

Remove the dough onto a lightly floured surface and knead for 3 minutes. Invert the bowl over the dough and let it rest for 15 minutes. Knead for another 3 minutes, or until the dough is smooth and elastic. Form into a ball, cover with a damp cloth and let it rest for 5 to 10 minutes.

Put the chopped spinach in a mixing bowl, sprinkle with a little salt and rub the salt in with your fingers until the spinach wilts. Squeeze the spinach dry and place in a clean bowl. Separate the leaves.

Put the chopped onion in a small bowl. Add a little salt and Adonis ground black pepper and rub the seasoning in with your fingers to soften it. Add to the spinach together with the Adonis sumac, pine nuts, lemon juice and olive oil. Mix well. Taste and adjust the seasoning if necessary. The filling should be quite strongly flavored to offset the rather bland pastry. Cover with ac clean kitchen towel and set aside.

Divide the dough into two balls. Place one on a lightly floured surface. Flatten it slightly and sprinkle with a little flour. Roll out into a large circle, about 2 mm thick, turning over the dough regularly and sprinkling with a little flour every now and then so that it does not stick. Use a 7 cm round pastry cutter (if you do not have pastry cutters, use a thin edged glass or cup) to cut the flattened pastry into as many circles as you can. Pick up the excess pastry, knead together and let it rest under the damp cloth.

Preheat the oven the oven to 230 degree.

Turn the circles over, put a teaspoon of stuffing in the middle of a circle. Lift two sides each one third of the circle, and with your thumb and index finger pinch them together half way down, making a thin raised joint. Lift the open side if the circle and pinch it equally to both loose ends to form a triangle with a thin raised inverted y in the middle-make sure you pinch the pastry tightly together so that it does not open during baking. Carefully transfer the filled triangle onto a non-stick baking sheet, or one lined with a silicone pastry mat or parchment paper, and makes the remaining triangles until you have finished both dough and filling. Brush them with a little olive oil.Bake in the preheated oven for 10-12 minutes, or until golden brown. Serve warm or at room temperature. These freeze very well, either before baking or after. All you have to do is to let them thaw and either bake them as above, or reheat in a medium oven.

Broad bean, feta and toasted sesame hummus

An Ottolenghi-style feta dip, perfect to kick off a late lunch this summer.

INGREDIENTS

31/4 cups (500g) frozen broad beans, blanched, refreshed, peeled
2 tbs tahini
400g can cannellini beans
2 garlic cloves, crushed
Juice of 11/2 lemons
200g feta
2 tbs sesame seeds, toasted
FlFlowering garlic shoots (from Asian grocers) and grissini, to serve

METHOD

1 Place broad beans, tahini, cannellini beans, garlic and lemon juice in a food processor and whiz until smooth. Add feta and whiz until smooth and combined. Season.

2 Spread hummus onto a serving plate and scatter with sesame seeds and garlic shoots. Serve with grissini to dip in.

5 Tbs. extra-virgin olive oil; more for the pan
1-1/2 lb. small eggplant (2 to 3 small), trimmed and cut in half lengthwise
3/4 tsp. plus a generous pinch kosher salt
1/4 tsp. freshly ground black pepper
2 anchovy fillets (optional)
1 small clove garlic
1 cup canned cannellini beans, drained and rinsed
3 pitas (preferably pocketless), each cut into eight wedges
2 Tbs. fresh lemon juice; more to taste
1 Tbs. chopped fresh mint, plus 1 Tbs. small leaves for garnish
2 tsp. chopped fresh oregano
2 Tbs. pine nuts, toasted

Position a rack 4 inches from the broiler element and heat the broiler to high. Line a rimmed baking sheet with foil and grease lightly with oil. Rub the eggplant all over with 2 Tbs. of the oil and sprinkle the flesh side with 1/2 tsp. of the salt and the 1/4 tsp. pepper. Arrange the eggplant, flesh side down, on the baking sheet and broil until the skin is charred and the eggplant flesh is very tender, 20 to 30 minutes.

Meanwhile, if using anchovies, mash them into a paste with the side of a chef’s knife. Roughly chop the garlic, sprinkle it with a generous pinch of kosher salt, and mash it into a paste with the side of a chef’s knife. Transfer the anchovy and garlic pastes to a food processor and add the beans, 2 Tbs. of the oil, and 1 Tbs. water. Purée until smooth.

When the eggplant is done, set it aside to cool briefly. Meanwhile, in a medium bowl, toss the pita wedges with the remaining 1 Tbs. oil and 1/4 tsp. salt. Arrange in a single layer on a baking sheet. Lower the rack so it’s 6 inches from the broiler. Broil the pita wedges until golden brown on both sides, 1 to 2 minutes per side.

Scrape the eggplant flesh from the skin and add the flesh to the puréed beans in the food processor, along with the lemon juice, chopped mint, and oregano. Pulse briefly to form a chunky dip. Adjust the seasoning with more salt, pepper, or lemon juice to taste. Serve sprinkled with the pine nuts and mint leaves, with the toasted pita crisps on the side for dipping.

Serving Suggestions

This is also great with crudités, especially bell peppers and fennel.

Ingredients:

1/2 1 Cups Short Grain Rice
2 Medium Finely Chopped Onions
2 Cloves Minced Garlic
1 Cup Chopped Mint
3 Cups Chopped Parsley
3 Large Chopped Tomatoes
2 Teaspoons Salt
1/2 Teaspoon Black pepper
1 Teaspoon Mixed spices
1/2 Cup Pomegranate Molasses
1/4 Cup Lemon Juice
1/4 1 Cups Olive Oil
1 Jar Grape leaves

Preparation:

1. Rinse the rice thoroughly and soak in warm water for 30 minutes. Drain the rice and put in a bowl. Stir in the onion, garlic, mint, parsley, tomatoes, salt, black pepper and mixed spices.
2. Drain the grape leaves and wash thoroughly under warm water. Drain the leaves well.
3. Flatten a grape leaf, vines facing upward, on a work surface. Place one tablespoon of the rice mixture on the wide side of the leaf. Fold the sides of the leaf on the rice mixture and roll the leaf to reach to form a finger size roll. Put in a deep pot. Continue filling the leaves in the same way until all rice mixture is used. Place in the pot. Place a plate on top of the stuffed leaves. This step will prevent the leaves from unroll will cooking.
4. Mix pomegranate molasses, lemon juice and olive oil. Pour on the stuffed grape leaves.
5. Cook the grape leaves on high heat for 30 minutes then reduce the heat and cover the pot. Cook for 30 minutes more.
6. Serve grape leaves warm or cold.

Ingredients (serves 4)

1 tablespoon Alfa One rice bran oil
1 medium brown onion, finely chopped
2 teaspoons Moroccan seasoning
1 cinnamon stick
3cm piece fresh ginger, grated
3 garlic cloves, crushed
1 medium carrot, halved, thickly sliced
650g butternut pumpkin, peeled, cut into 3cm cubes
1 1/2 cups vegetable stock
400g can crushed tomatoes
1/2 (500g) small cauliflower, cut into small florets
400g can chickpeas, drained, rinsed
1 medium zucchini, quartered, thickly sliced
1 tablespoon honey
Fresh coriander sprigs and couscous, to serve

Method

Heat oil in a large heavy-based saucepan over medium heat. Add onion. Cook, stirring, for 3 to 4 minutes or until onion has softened. Add Moroccan seasoning, cinnamon, ginger and garlic. Cook, stirring, for 1 to 2 minutes or until fragrant.

Add carrot and pumpkin. Cook, stirring, for 1 minute or until combined. Add stock and tomato. Cover. Reduce heat to low. Cook, stirring occasionally, for 20 minutes or until vegetables start to soften.

Add cauliflower. Stir to combine. Cover. Cook for 10 minutes or until vegetables start to soften. Add chickpeas, zucchini and honey. Cover. Cook, stirring occasionally, for 10 minutes or until vegetables are tender. Season with salt and pepper.

Sprinkle tagine with coriander sprigs. Serve with couscous.

Ingredients:

4 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
2 teaspoons ground cumin
3/4 teaspoon ground cinnamon
1/2 teaspoon ground allspice
2 (14 ounce) cans vegetable broth
3/4 cup dried lentils, rinsed, picked over
3/4 cup long-grain white rice
2 large onions, sliced
3 tomatoes, quartered lengthwise
1 cucumber, peeled, cut into rounds
plain yogurt
chopped fresh mint

Directions:

1  Heat 2 tablespoons oil in large saucepan over medium-high heat.
2 Add chopped onion and next 4 ingredients; sauté until onion softens, about 4 minutes.
3 Add broth and lentils; bring to boil.
4 Reduce heat to medium-low and simmer, covered, 10 minutes.
5 Stir in rice; return to boil.
6 Reduce heat to medium-low; cover and cook until liquid is absorbed and rice and lentils are tender, about 15 minutes longer.
7 Meanwhile, heat 2 tablespoons oil in heavy large skillet over medium-high heat.
8 Add sliced onions; sauté until soft and beginning to blacken, about 20 minutes.
9 Season pilaf to taste with salt and pepper.
10 Transfer to plates; top with blackened onions.
11 Place tomatoes and cucumber alongside.
12 Top pilaf with dollop of yogurt.
13 Sprinkle with mint.

Chickpea tagine with figs recipe

Ingredients (serves 4)

2 tbs olive oil
1 onion, chopped
2 garlic cloves, finely chopped
2 tsp Moroccan spice mix (see note)
2 x 400g cans chickpeas, rinsed, drained
400g can chopped tomatoes
2 cups (500ml) salt-reduced vegetable stock
2 zucchini, chopped
175g green beans, trimmed, halved
1/2 cup (100g) chopped dried figs
2 cups (400g) couscous
2 tbs chopped coriander leaves
1 tbs harissa (optional) (see note)

Method

Heat oil in a saucepan over medium heat. Add onion, garlic, spice mix and some salt and pepper, and cook, stirring, for 5 minutes until soft. Stir in chickpeas, tomato and stock. Bring to the boil, then cover, reduce heat to low and simmer for 10 minutes. Add the zucchini, beans and figs and cook for a further 5-8 minutes until the vegetables are tender.

Meanwhile, place the couscous in a large heatproof bowl and pour over 2 cups (500ml) boiling water. Cover the bowl with a clean tea towel. Set aside for 5 minutes, then fluff up with a fork.

Divide couscous and vegetable tagine among plates, garnish with coriander then serve with harissa, if desired.

Notes

Moroccan spice is from supermarkets. Harissa is a North African chilli paste, from delis and gourmet food shops.

For a healthy weeknight meal, you can rely on these Middle Eastern wraps with felafel, hummus and tabouli.

Ingredients (serves 4)


200g packet felafel mix (see note)
vegetable oil, for shallow-frying
4 sheets lavash bread or mountain bread
1/3 cup hommus dip
Tabouli
1/4 cup burghul (cracked wheat)
1 cup flat-leaf parsley leaves, chopped
1/4 cup mint leaves, chopped
1 tomato, chopped
1/2 small white onion, finely chopped
2 teaspoons olive oil
1/2 lemon, juiced

Method


Make tabouli: Place burghul in a small bowl. Cover with cold water. Stand for 15 minutes. Drain. Use the back of a large metal spoon to press out excess water. Transfer burghul to a large bowl. Add parsley, mint, tomato, onion, olive oil and 2 tablespoons lemon juice. Mix until well combined. Season with salt and pepper.

Meanwhile, make felafel following packet directions. Shape mixture into 16 balls. Pour enough vegetable oil into a non-stick frying pan to cover base. Heat over medium heat until hot. Cook felafel, in batches, turning often, for 4 minutes or until lightly golden all over and heated through. Drain on paper towel.

Spread each lavash with 1 tablespoon hommus. Spoon one-quarter of tabouli along 1 short end of 1 sheet lavash bread. Top with 4 felafel. Season with salt and pepper. Roll up firmly. Repeat with remaining lavash, hommus, tabouli and felafel. Serve.

Notes


Felafel mix is available from the health food section of your supermarket. Shortcut: You can buy tabouli from the deli section of the supermarket, but it's cheaper to make yourself.

Ingredients
 


410g can chickpeas, drained
1 clove garlic, chopped
100g tahini (puréed sesame seeds)
50ml cold pressed rapeseed oil
squeeze lemon juice
8 wholemeal pitta breads


Directions:
 


Place the chickpeas, garlic and tahini in a food processor and blend. Gradually blend in the oil, lemon juice and 75ml water to give a smooth paste. Season to taste.

Griddle the pitta breads for 1-2 minutes each side until golden and toasted. Serve with the hummus.

Cook’s tip

Cut the griddled pittas into strips and serve with vegetable crudités for a buffet.

Ingredients


For the cumin pancake
50g plain flour
1 small egg
150ml 2% milk
1tbsp cumin seeds, lightly crushed
25ml sunflower oil
For the hummus
200g canned chickpeas, drained
50g tahini
juice of ½ lemon
2 cloves garlic, minced
1tsp ground cumin
20ml extra-virgin olive oil
salt
pepper
pinch of paprika, to garnish


Directions:

Prepare the hummus by combining the chickpeas, saving 1 tbsp for the garnish, with the tahini, lemon juice, garlic, ground cumin, extra-virgin olive oil and seasoning. Pulse until smooth then adjust the seasoning if necessary. Scrape into a serving bowl, cover and chill.

Prepare the pancake batter by sifting the flour with a pinch of salt into a mixing bowl. Add the egg and half of the milk and whisk, starting slowly, until you have a smooth, thick batter. Whisk in the rest of the milk until you have the right consistency.

Fold the cumin seeds into the batter. Add teaspoons of the sunflower oil to a small frying pan and heat over a medium heat. Fry the pancake batter, 2-3 tablespoons per pancake, making sure you tilt the pan to coat the surface as soon as you have added the batter.

Keep the cooked pancakes warm on a plate lined with aluminium foil that is big enough to wrap over the pancakes and cover them loosely.

When ready to serve, lay the pancakes back in a dry, clean frying pan set over a low heat. Cook until they are golden brown and blistered on one side.

Remove the hummus from the fridge and garnish with the whole chickpeas and a pinch of paprika. Cut the pancakes into triangles and serve alongside the hummus.

Ingredients

1 (15-ounce) can no-salt-added chickpeas (garbanzo beans)
1 tablespoon tahini (sesame seed paste)
1 garlic clove, peeled
Dash of crushed red pepper
3 tablespoons fresh lemon juice
1 cup chopped tomato
3/4 cup chopped seeded English cucumber
1/4 cup chopped green onions
1/4 cup chopped pitted kalamata olives
1/4 cup (1 ounce) crumbled feta cheese
2 tablespoons minced fresh cilantro
1 tablespoon minced fresh mint
4 (6-inch) pita bread rounds, halved

Preparation

Drain chickpeas in a colander over a bowl, reserving 1 tablespoon liquid. Combine chickpeas, tahini, garlic, and red pepper in a food processor, and process until smooth, scraping sides of processor bowl once. Add lemon juice and reserved chickpea liquid, process until smooth. Spoon mixture into a bowl; set aside.

Combine tomato and next 6 ingredients (tomato through mint) in a bowl. Spoon 1/4 cup hummus mixture into each pita half; top with 1/4 cup feta-olive salsa.

Ingredients

2 cups coarsely chopped carrot (about 4 medium)
1 cup uncooked Israeli couscous
2 1/4 cups water
1 (3-inch) cinnamon stick
3 tablespoons finely chopped fresh cilantro
2 tablespoons finely chopped fresh parsley
2 1/2 tablespoons extravirgin olive oil
1/4 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
3/4 teaspoon salt
1/2 teaspoon ground cumin
1 garlic clove, minced

Preparation

1. Combine first 4 ingredients in a large saucepan; bring to a boil. Cook 10 minutes or until carrot and couscous are tender. Drain; discard cinnamon stick. Combine couscous mixture, cilantro, and remaining ingredients in a large bowl; toss gently to coat.

Lentils and vegetables team up to make a deliciously filling soup.

Ingredients

2 carrots, sliced
1 stalk celery, diced
1 onion, chopped
3 cloves garlic, finely chopped
1/2 teaspoon ground cumin
2 tablespoons olive oil
6 cups chicken broth
1 can diced tomatoes (14oz)
1 cup red lentils
2 bay leaves
1 sprig fresh thyme
1/2 cup chopped flat-leaf parsley
Red wine vinegar to taste
Olive oil to taste
salt and pepper

Directions

In a saucepan over medium heat, soften the vegetables with the cumin in the oil. Season with salt and pepper. Add the broth, tomatoes, lentils, bay leaves and thyme. Bring to a boil, reduce the heat and simmer until the vegetables and lentils are tender, about 20 minutes. Remove the bay leaves and thyme sprigs. In a blender, purée until smooth. Add more broth if necessary. Add the parsley. Adjust the seasoning. Drizzle each serving with vinegar and oil.

Ingredients

1tbsp olive oil
1 onion, sliced
1 garlic clove, sliced
2tbsp tagine paste or harissa paste
1 large cauliflower, broken into florets
2 potatoes, peeled and cut into small chunks
100g (3½oz) pitted black or green olives
3tbsp sultanas or raisins
1tsp honey
small bunch coriander, chopped
couscous, to serve

Directions

Heat the olive oil in a large casserole and fry the onion for 5 minutes, add the garlic and tagine or harissa paste and stir. Add the cauliflower, potato, olives and raisins and 500ml (17fl oz) water.

Bring to the boil and then simmer until the veg is tender. Stir in the honey, sprinkle on the coriander and serve with some couscous.

Ingredients:

2 cups lentils (rinsed)
4 cups water
1/4 cup olive oil
1 red onion (chopped)
3 garlic cloves (minced)
2 teaspoons cumin
1 -2 lemon (juiced-to taste)
1/4 cup parsley (minced)
salt & freshly ground black pepper
2 tomatoes (seeded and diced) (optional)
10 -15 black olives (optional)
1/4 cup feta cheese (optional)
1/2 cup cucumber (seeded & diced0 (optional)

Directions:

1 Cook lentils over medium heat simmer covered 20-30 minute Do not overcook, drain and rinse with cold water.

2 Heat olive oil in a saute pan over medium heat, add onion and cook until translucent, add garlic & cumin, cook another minute.

3 Place lentils in a large bowl, add onions, cumin & stir in lemon juice, parsley, salt and pepper.

4 Set aside for at least 30 minutes.

5 Garnish with tomatoes, olives, cheese or cucumbers.

Roasted red peppers take classic hummus in a bold new direction. One bite and you can almost hear the peppers sizzling on the grill. This spread is perfect for outdoor eating adventures like picnics and cookouts.

Ingredients

1 large red bell pepper
1 can (14 ounces) chickpeas, drained, reserving ½ cup liquid
1 1/2 tablespoons lemon juice (22 ml)
1 1/2 tablespoons tahini (22 ml)
1 1/2 large garlic cloves, peeled and crushed with a pinch of salt
1 tablespoon extra-virgin olive oil (15 ml)
unit Kosher salt
unit Freshly ground black pepper
1/4 teaspoon cayenne pepper (1 ml)
2 tablespoons toasted sesame seeds, still hot from toasting (30 ml)

Directions

Roast the red bell pepper directly over a gas burner, under a broiler, or on a grill. Turn frequently with tongs until it is blackened and the skin is blistered all over, about 10 to 12 minutes. Place the pepper in a loosely sealed paper bag or in a covered bowl to steam for 10 minutes to loosen the skin. When the pepper is cool enough to handle, rub the skin off with your fingers, a paper towel, or the backside of a paring knife. Slit the pepper open and remove the stems and seeds.

Put the roasted pepper, chickpeas, lemon juice, tahini, crushed garlic and extra-virgin olive oil in the bowl of a food processor, and puree until nearly smooth, pausing to scrape down the sides of the bowl. Moisten with some of the chickpea liquid and season with salt and pepper and cayenne. Continue to process until smooth and adjust seasoning if necessary. Transfer the hummus to a mixing bowl.

Toast the sesame seeds over a medium-high flame in a frying pan, tossing constantly until golden brown. Add the hot sesame seeds to the hummus for an extra bit of flavour and crunch.

Serve with crudités, toasted pita triangles, or tortilla chips.

Bulghour with broccolis recipe

Ingredients

1 head of broccoli, prepared into florets
1tbsp chives, chopped + extra to garnish
For the bulghour
25ml olive oil
100g bulgur wheat
25g raisins
1tbsp sultanas
25g pine nuts, toasted
salt
pepper

Prepare the bulghour by placing in a bowl and pouring over enough boiling water to completely cover. Let is sit for 15 minutes before running a fork through it. Stir through the olive oil and some seasoning.

Cook the florets of broccoli in a large saucepan of boiling, salted water for 2 minutes. Drain and refresh in iced water. Strain the broccoli and set to one side.

Spoon the bulghour into serving bowls and top with a combination of the sultanas, pine nuts and raisins. Sit the broccoli florets on top. Garnish with the chopped chives and chive stalks before serving.

Quick falafel with cucumber & herb salad (gluten-free) recipe

Ingredients (serves 4)

800g canned chickpeas
1 tbs tahini paste*
1 cup flat-leaf parsley leaves
2 garlic cloves
1 tsp ground cumin
1 egg
Vegetable oil for deep-frying
Hummus, to serve

Cucumber & herb salad
2 Lebanese cucumbers, halved, sliced
1/2 cup whole mint leaves
1/2 small red onion, thinly sliced
1 long red chilli, seeds removed, thinly sliced
1 tbs red wine vinegar
1 tbs olive oil

Method

Drain chickpeas, reserving 2 tablespoons of the liquid. Place chickpeas, reserved liquid, tahini, parsley, garlic, cumin and egg in a food processor and process until smooth. Season well with salt and pepper.

Form mixture into 8 flat patties. Half fill a deep-fryer or large heavy-based saucepan with oil and heat to 190°C (a cube of bread will turn golden in 30 seconds when oil is hot enough). Deep-fry falafel in two batches, for 2-3 minutes until browned. Drain on paper towel.

Place all salad ingredients in a bowl and toss to combine. Serve falafel with the salad and hummus.

Aubergine salsa recipe

Ingredients

2 aubergines
4 tomatoes
4 spring onions, finely sliced
2tbsp olive oil
1tsp cumin seeds
1tsp fresh marjoram, chopped

Directions

Heat the grill. Slice the aubergines lengthways into 1.5cm (¾in) strips. Put under the grill and cook until golden, then turn and repeat. Don't take your eye off them as they brown very rapidly.

When cooked, put in a lidded plastic container and leave to cool, then chop into small pieces. Dip the tomatoes in a pan of simmering water for 30 seconds, remove and allow to cool. Then peel away the skin, cut each tomato into quarters, remove all the seeds and dice into small pieces.

Mix onions and all of the above with the olive oil. Dry fry the cumin for 2-3 minutes and add to the aubergine, with the marjoram, and mix well.

The salsa can be made a day in advance - store it in the fridge but serve at room temperature.

Falafels Recipe

 Ingredients

50ml sunflower oil
1 onion, finely chopped
2 clove garlic, crushed
400g canned chickpeas, drained and rinsed
2 tsp ground cumin
1 tsp ground coriander
small handful of parsley, finely chopped
1 egg, beaten
50g plain flour
salt and pepper

Pre-heat the oven to 220 degrees. Heat 15ml of the sunflower oil in a frying pan over a moderate heat and sweat the onion and garlic for 4-5 minutes, stirring occasionally, until soft.

Continue cooking for a further 2-3 minutes until they start to colour, add the spices and stir well, then transfer to a mixing bowl.

Add the chickpeas and mash using a potato masher until the chickpeas are broken down. Stir in the parsley and some seasoning, then add the beaten egg and mix well, using your hands. Take tablespoons of the mixture and mould into small balls using the palms of your hand. Roll in the flour, shaking off any excess.

Heat the remaining sunflower oil in a large frying pan over a moderate heat and brown the falafels all over. Transfer to a line baking tray and bake for 10-12 minutes until golden brown and crispy. Remove and serve piled on a plate.
